Rajma Pulav is one of the most favorite vegetarian Indian dishes and is called the ultimate comfort meal of the day. It’s a simple Punjabi rajma chawal. It’s full of protein, fiber, and a perfect quick fix and healthy meal, better than a take-out or fast food. Serve it any day, any time, with yogurt or flavorful raita. Soak rajma overnight, then pressure-cook for about 25 minutes. Make sure to discard the water in which rajma is soaked. Wash and soak the basmati rice, then let it sit for about 30 minutes. I made it optional to add onion using this recipe. You can add onion if you like; otherwise, omit it.
