Scrumptious Aloo Paratha Made by Jaimi!!!

Ingredients to make Dough for Aloo Paratha are 2.5 cups of  plain white flour, 1 tsp of salt, and 1 cup of water or more.

Ingredients to make Filling for Aloo Paratha are 1.5 cups of mashed red potatoes unpeeled(4 medium potatoes), 2 tbsp of fresh chopped cilantro, 1/2 tsp of turmeric powder, 2 tsp of chaat masala, 1 tsp of salt, 2 tbsp of lime juice, and 1 chopped green pepper.

Instructions

Make the dough:
1. Place flour and salt in a stand mixer.  Trickle in water slowly.  Let it mix until it forms into a stiff dough.  Set a side for sometime.

Make the stuffing:

  1. Place all the ingredients into a bowl and mix well.  Divide into equal size portions and form into balls.
  2. When ready to use the dough, divide into equal size portions and shape it into balls.
  3. Roll out one of the balls of dough into a 4″ disc.  Keep the center thicker and make the edges thin.
  4. Place the stuffing in the center and pull the edges over the top of the stuffing and pinch together to seal tightly.
  5. Flatten into a disc and roll into a circle about 6 inches wide.
  6. Heat a heavy-bottomed skillet. Place one of the parathas in the skillet and cook until the bottom is covered with golden brown spots.  Turn over and cook the other side until it has golden brown spots.
  7. Add 1 tsp of sunflower oil on the top of the paratha and then flip over and repeat on the other side.  Turn over paratha one last time and let it cook for about 30 seconds or so.
  8. Repeat this process with the rest of the parathas.
  9. Note: You may add or omit ingredients according to your taste.

Aloo Paratha tastes best with butter, Indian pickle, and yogurt.
