Sooji no Siro – Suji ka Halwa is a sweet day-to-day Indian dessert made with sooji, milk, sugar, nuts, and a fragment of cardamom powder. Ingredients
- 1 cup sooji
- 1 cup ghee
- ½ cup sugar
- 4 cups milk
- ½ tsp cardamom powder
- ½ cup sliced almonds
- 2 tbsp green raisins

Notes: Let semolina roast for about 4 minutes. Warm milk in a separate saucepan. Add milk and continuously stir the siro mixture. Then add sugar and let it cook for about 7 minutes. Cook the siro mixture on low heat until the ghee will separate from it. Add raisins, cardamom powder, and almonds. Cover the pan and let it cook for about 5 minutes. Mix it well. Garnish with almonds and cardamom powder. Saffron and nutmeg can be added to add flavor. To make Prasad, you can use the ratio of the ingredients: take 1 1/4 cup semolina, 1 1/4 cup sugar, 1 1/4 cup ghee, and 3 3/4 cup milk.
