Dhudhi Muthia Made by Jaimi!!!

Ingredients to make dhudhi muthia are 3 cups grated dhudhi, 1 cup whole wheat flour, 2 cups semolina, 1 cup gram flour, 1 TSP turmeric powder, 1 TSP cumin seeds, 2 limes juice, 3 TSP sugar, 6 TBSP finely chopped cilantro, 3 TSP sunflower oil, 1.5 TSP salt, oil for greasing, and water.

Instructions

  1. Take a large mixing bowl and combine all the ingredients.  Knead into a soft dough adding water if needed.
  2. Apply oil on your hands and divide the mixture into equal portions.
  3. Shape each portion into a cylindrical roll.
  4. Arrange each roll on a greased sieve and steam in a steamer for about 30 minutes.
  5. Remove them into a lined parchment paper plate.
  6. Let it cool down completely.

Muthia are steamed savory snack from Gujarati cuisine.  It is made with mixture of flours and vegetables of your choice such as dhudhi or methi.  The mixture of dough then formed into log-shapes and gently steamed into a steamer.  The cooked muthiya can be eaten as it is or can be sautéed with sesame seeds, mustard seeds, and curry leaves until it turns to crisp, golden.
