Cilantro Uttapam Made by Jaimi!!!

Ingredients to make cilantro uttapam are semolina, finely chopped cilantro leaves, all-purpose flour, salt, water, Greek yogurt, and sunflower oil for greasing and cooking.

Uttapam are an extremely popular dish from South India.  Cilantro uttapam are savory pancakes made of semolina, all-purpose flour, yogurt and cilantro.  Traditionally uttapam batter is made from rice and black gram lentils.  First rice and lentils are soaked over night, next is grinding, and then fermenting the batter which can be a long process to prepare the batter for uttapam.  Although, I have used semolina for a quick and easy way to prepare uttapam using the recipe below.  They are delectable and enjoyed as a breakfast or as a snack with or without sambar.
