Aloo Bhindi

Aloo Bhindi is a simple North Indian style dry subzi served with rice and dal or hot roti. Here is how to make Aloo Bhindi. This recipe makes fresh masala. Let’s start by making fresh masala. Make ginger, garlic, green chili, and turmeric a smooth paste. Then transfer the mixture to the bowl and add lemon juice and oil. Mix it well. Now your fresh masala is ready to use. I have decided to skip the fresh masala step. The next step in this recipe would be to make subzi. Heat oil and add grated ginger and garlic paste. Then let it cook until it turns light brown. It’s optional to add 1 tsp of mustard seeds. I have not added it to this recipe, but it’s up to you. Add potato and lady finger and mix well. Next, add salt as per your taste. Mix well. Now add turmeric powder and optional to add 1 tsp Kashmiri red chili powder. I haven’t added any red chili powder to this recipe. Mix it well. Add fresh masala and remix it. Then, cover the pan and let it cook for about 10 to 15 minutes. After 15 minutes, remove the lid and cook it for another 5 minutes. You can add dry mango powder and cook it for a minute. Then, turn off the stove and remove the subzi into a bowl. Optional: garnish it with cilantro leaves. Serve it warm.

  • 1 pound of chopped okra
  • 3 large thinly sliced potatoes
  • ½ tsp turmeric powder
  • 1 tbsp dry mango powder
  • salt to taste
  • 2 tbsp sunflower oil
  • 2 tbsp grated ginger
  • 2 tbsp grated garlic
