












Bajri Methi Na Thepla
Bajri Methi Na Thepla is a super healthy Gujarati dish made with whole wheat and bajri flour. Flavored with methi and spiced, these theplas can be served at breakfast or dinner or packed in a lunch box. Nowadays, fresh green methi is available all year, especially in abundance in winter. Fresh green methi is very good for your muscular system and has a high content of Vitamin B. Bajri has high amounts of fiber and aids digestion. It also lowers bad cholesterol while boosting the good cholesterol in your system. Therefore it’s very good for your cardiovascular health. First, prepare the fenugreek: pluck the methi leaves and wash them in running water. Rough chop the leaves. Let’s start the recipe to make Bajri Methi Na Thepla: mix all ingredients, including 4 tbsp of oil, in a bowl. Add water as needed and knead into a dough. Cover and keep the dough aside for about 15 minutes. Heat the pan and start rolling out the thepla. Place thepla and cook for a half minute or so. Ingredients
- 1.5 cups whole wheat flour
- 1 cup bajri flour
- 2 cups chopped methi
- 1/4 cup sesame seeds
- 1/4 cup jaggery
- 4 green chilies
- 2 tbsp grated ginger
- 3 tbsp grated garlic
- 1 cup Greek yogurt
- 2 tsp turmeric powder
- 4 tbsp sunflower oil
- 1 tbsp sunflower oil to shallow fry the thepla
- salt
- water as needed
