




















Gajar Halwa Or Carrot Halwa
Gajar Halwa is one of the most popular Indian desserts to crave, whether it’s winter, summer, or spring. For foodies, I have found a unique recipe to make Gajar Halwa with a layer of a mixture of raisins and nuts. Carrots are easy to find at any grocery store. It requires very few fresh ingredients. First, make fresh khoya using whole milk. Tip: make sure to grease the pan with ghee. Add milk to the pan until the milk evaporates and forms lump-free milk solids. This is known as khoya. Grated carrots are sauteed in ghee on a low flame for about 15 minutes.
Then, add warm milk and cook for 15 to 20 minutes or until it dries completely. Now add condensed milk and cook till it is absorbed in the halwa. Add 1 or 2 tbsp ghee, cardamom powder, chopped cashews, and khoya. Mix everything and let it cook for a minute or so. Please turn off the stove and serve it hot. An extra step to this recipe would be to place gajar halwa in a mold with raisins and mixed nuts mixture. In a blender, combine raisins, sliced almonds, cashew nuts, and pistachios until a crumbly mixture. Press the mixture into a baking pan and then top them with the carrot halwa. You can cut it and serve it to your guest. You will be left with a decadent, nutty, and distinctly fragmented dessert. Your guest will be impressed after having the homemade Gajar Halwa.
