It is served as an evening snack but can be eaten at any time of the day! It is dressed with a flavorsome green cilantro chutney and sprinkled with dry garlic chutney. Vada Pav has the best companion and tastes excellent with fried green chilies. It is a quick grab-and-go snack that’s cheap, filling, delicious, and fun food everyone loves.
Ingredients
- For batata vada stuffing
- 2 tablespoons of sunflower oil
- 1 teaspoon mustard seeds
- 3 garlic cloves grated
- 1 tablespoon grated ginger
- 2 grated green chilies
- 1/4 tablespoon turmeric powder
- 2 cups potatoes, boiled, peeled, and mashed
- salt to taste
- 1 tablespoon cilantro leaves, chopped
- For batata vada batter
- 2 cups besan
- 1 tablespoon rice flour
- 1/4 tsp salt
- 1/4 tsp turmeric powder
- water as needed
- sunflower oil for deep frying
- pinch of ENO
- Dry garlic chutney
- 1/4 cup desiccated coconut
- 4 tablespoons peanuts
- 5 dry Kashmiri red chilies
- 2 tablespoons sesame seeds
- 10 garlic cloves
- salt to taste
- 1 tablespoon of Kashmiri red chili powder
