Dry Potato Bhaji Made by Jaimi!!!

Ingredients to make dry potato bhaji are 3 large red potatoes boiled and cut into cubes, 1 TSP mustard seeds, few curry leaves, 1 TSP sesame seeds, 1/2 TSP turmeric powder, 1/4 TSP Kashmiri red chilli powder, add salt as per taste, juice of 1 lime, 2 TSP sunflower oil, and 1 TBSP coconut sugar.

Instructions:

  1. Heat oil in a pan.  Add mustard seeds, when they begin to crackle add sesame seeds, and curry leaves.  Sauté for few seconds.
  2. Add turmeric powder, red chilli powder, salt, and sugar, and potatoes.  Mix gently using spatula.
  3. Cook for 3-4 minutes over low flame.  Add lime juice and mix it gently.
  4. Turn off the flame.
  5. Transfer dry potato bhaji to a serving bowl.  Optional: garnish with finely chopped cilantro.
