Ingredients to make dry potato bhaji are 3 large red potatoes boiled and cut into cubes, 1 TSP mustard seeds, few curry leaves, 1 TSP sesame seeds, 1/2 TSP turmeric powder, 1/4 TSP Kashmiri red chilli powder, add salt as per taste, juice of 1 lime, 2 TSP sunflower oil, and 1 TBSP coconut sugar.
Instructions:
- Heat oil in a pan. Add mustard seeds, when they begin to crackle add sesame seeds, and curry leaves. Sauté for few seconds.
- Add turmeric powder, red chilli powder, salt, and sugar, and potatoes. Mix gently using spatula.
- Cook for 3-4 minutes over low flame. Add lime juice and mix it gently.
- Turn off the flame.
- Transfer dry potato bhaji to a serving bowl. Optional: garnish with finely chopped cilantro.
