Dry Aloo Capsicum

Dry Aloo Capsicum is an Indian sabzi made using potatoes, green bell pepper, tomatoes, and spices. You can serve it as lunch or dinner with roti, puri, or paratha. I have cooked potatoes, tomatoes, and bell pepper in separate pots to avoid overcooking and mussy potatoes. Add or omit ingredients according to your taste buds using the recipe to make Dry Aloo Capsicum.

Ingredients

  • 4 tbsp sunflower oil
  • 1 tsp cumin seeds
  • 2 tbsp ginger garlic paste
  • 1 cup peeled and cubed potatoes
  • ½ tsp turmeric powder
  • ½ tsp Kashmiri red chili powder
  • ½ tsp salt or to taste
  • 2 cups chopped vine tomatoes
  • 1 cup diced green bell pepper
  • 1 tbsp dry mango powder
