Ingredients

  • for dhokla batter
  • 1 cup gram flour
  • 1 tbsp semolina
  • 5 tsp Turbinado sugar
  • 1/4 tsp turmeric powder
  • 1/2 tsp citric acid
  • 1/2 tsp salt
  • 1 tsp ENO
  • 2 tbsp grated ginger-green chili
  • 1 cup water or as needed for the batter
  • for steaming dhokla
  • 6 cups water
  • for tempering
  • 2 tbsp sunflower oil
  • 8 curry leaves
  • 1 cup water
  • 2 tsp mustard seeds
  • 1 tsp sesame seeds
  • 3 green chilies slitted and deseeded
  • 1 1/2 tbsp Turbinado sugar
  • a pinch of salt
  • 1 tsp lemon juice
  • finely chopped cilantro leaves(optional)
